I know that ventresca de atún is tuna belly, but bull belly doesn't seem to exist when googled! Beef belly is supposed to be fatty and not the ideal meat for carpaccio.

: it's not a typo - toro is a Japanese word. This glossary describes it as choice tuna belly, although I'm not sure if belly is the best translation, especially if it's for a menu. http://www.lasushibars.com/sushiglossary.htm
