@ Asker I think 'grillées' is probably not such a bad idea... they would certainly start to burn and blister before anything else, which would no doubt give people the idea. Perhaps 'tomates grillées (à faire des cloques)'???

Skillet OK, looks like all US sources then, which could explain the origins of this technique. In which case, perhaps paraphrasing will be necessary...

@ Asker Not really, I don't think — the tomatoes will reach the 'blistering stage' some time before they actually 'split', byt which time they are almost certainly over-cooked!

@ W/A It isn't possible to say categorically that "tomatoes are cooked in a skillet" — the source text makes no mention of this, and we know that it is only one of the possibilities.

In fact, we now know that for this specific recipe, they do indeed suggest using the oven, as I would have expected in the first place.

Yes, logical but tomatoes are cooked in a skillet, not in the oven. so some additional Fr wording/word is needed with rôti to indicate it's not about oven roasting and that's it's a very quick process

@ W/A Yes, but that's only a detail, to do with the different structure of the vegetables — peppers need longer, as their skins are quite firmly attached, whereas cherry tomatoes are much more fragile and start to 'pop' very quickly indeed; if left too long, they will be in danger of bursting.

The tomatoes are only in the skillet (cooked in olive oil etc.) until the skin starts to blister. So much shorter time than sweet peppers that are roasted in the oven. At least that's what i gather from the recipes I saw

@ Abel That is indeed true; BUT I feel certain the writer would simply have said 'peeled' (or one of the other more technically specific terms used in cooking) had that been what they meant; the specific use of the fairly unusual term 'blistered' certianly seems to suggest they were indicating a specific type of technique.

@ CH I don't think it is possible to define a specific time for 'roasting', and with the kind of latitude used in cooking, we can safely assume in needn't automatically be in the overn either; nor in fact does the source text preclude this possibility.

Yes, but both suggestions "tomates rôties" and "passées au four (cloquees)" refer to the process of placing them in the oven. Roties is at least 45 minutes. This is simply the process of "saisi" and keeping intact the tomatoes.

@ BDF Yes, that's exactly how I understand it too — we often do something like this with e.g. sweet peppers too, in that instance, often to make it easier to remove the skins.

Blistered I think the meaning of "blistered" in the context of cooking tomatoes, is cooking quickly with oil at a medium-high temperature, so that the skin is blistered (and slightly charred?), while the inside is only lightly cooked.

disagree Tony M : No, that's quite a different concept, where they have been partially dried out by heating slowly, so they may be wrinkly, but not specifically 'blistered' in the way that is meant here.

ok...je pensais plutôt des oignons confits comme avec un bon rosbif cuit au four. Mais, la BD Finch a peut-être la meilleure piste (tomates saisies à la poêle et pas forcément au four).

agree Tony M : Well, this is certainly the same idea as 'roasted sweet peppers', for example. And now we have the actual recipe, it does indeed say 'baked in the oven'!

neutral writeaway : none of recipes I saw mentions an oven. they are cooked in a skillet until they start to blister. Imo rôti indicates a longer cooking time in any case
