La commande squelette est faite en fonction des plans de bacs réalisés par le responsable, avec l’assistance de son responsable régional.
...based on the plan of the shop units/store units/display cabinets/display freezers, etc. etc. drawn up by the manager with the help of their Regional Manager.
Yes, I have searched this term in Kudoz, and there are many, many references. However, I am looking for the mot juste in my very specific context, as I am not even sure what they should be called in English. My text is operational guidelines to be followed for the opening of a new frozen foods store (a well-known specialist frozen food chain-store). I am understanding 'bac' here to mean the display freezers, the refrigerated units laid out in the store containing the goods for sale, but am wondering whether there is a standard, context-specific term for these in English, used within that industry? I am wondering, also, whether the generic term 'bac' might also be used in French to refer to any shop unit/container containing goods for sale.... as this store, like many others, also sells 'dry goods' (as suggested accompaniments to the frozen food being sold). Of course, I can work out from the surrounding context in my (very long) document which type of container/unit they are referring to, but I really wanted to post this question to see if I could get some expert feedback. As 'bac' to me suggests a (usually large) container or bin, or something you look down into, or which is somehow enclosed and you have to open to access the goods.... as opposed to other types of display units in supermarkets - e.g. shelving units, I don't imagine it refers to the latter also - but the more I think about it, the more I think I don't really know! I am sure there is someone out there who does, though. So, I guess I am looking for just one suitable term to refer to the freezer units... or have I answered my own question?! And don't even get me started on gondolas!

freezers/freezer units/freezer display units...
worked in a supermarket for a while and people basically referred to "freezers" in general, sometimes "freezer units" or "freezer displays"
When necessary to know which particular one to stack then specified "frozen veg upright freezer" or "meat chest freezer" or "butterfly (opening) chest freezer and so on.
So if you have photos you may be able to work out which to use in each circumstance
