Estoy traduciendo un archivo de Argentina que habla sobre los procedimientos de limpieza de una playa de faena. Aparentemente en la sección de "Tripería y Mondonguería" hay una máquina que se llama "Desarradora de tripas". ¿Alguien tiene idea de a qué se refiere? No he encontrado tampoco el verbo "desarrar". Pero sí he encontrado fotos de la máquina y parece que efectivamente existe. ¿Ideas?

This applies only to the gut or intestine, not to offal (edible internal organs such as liver or kidneys) in general, and it applies only to a certain stage in the cleaning process. Intestines are used largely for "casings" (sausage skins).

"The processing of animal intestines includes the following principal operations: separation of the intestinal complex into parts, removal of the intestinal contents and thorough washing of the intestines, fat extraction (skimming), and removal of the mucous membrane (stripping) and other superfluous layers."

So which part of this process is "desarrado"? Lorena has cited a source (I'm not sure which country it comes from) which says that it's the removal of the mucous membrane:

The following source from Argentina seems to agree, but indicates that the mucous removal stage also includes removal of food residues (known as "manure stripping"), done after the intestines are turned:

"Se procede luego al desgrasado de esta tripa; para ello se utiliza una máquina: un operario se encarga de que las tripas se pasen por una desebadora mecánica (máquina extractora de sebo), para quitarle adiposidad. […] A continuación los lavadores de tripas las lavan […]. Revierten la tripa dejando expuesta la superficie interna al exterior. Otro obrero las hace pasar por una segunda máquina de cilindros-cepillos (de cerda), que tiene por objeto hacer una limpieza perfecta33.”
Note 33 reads: “En años posteriores a esta máquina se la va a llamar 'desarradora'; limpia el sarro -impurezas y restos de alimento- adherido a la cara interna de las tripas, operación denominada 'romper el sarro'.”

The previous source is German. Mucus is commonly called "slime", and removing it is called "de-sliming":

I put "intestine" in parentheses in the answer box because these machines are normally just called "strippers" and/or "de-slimers" (or stripping / de-sliming machines); the context will normally show that they are for intestines, so you won't usually need to specify that.
