I think this is the heart, I've had bad experiences with these creatures.
This weevil usually infests palms younger than twenty years. While the adult causes some damage through feeding, it is the burrowing of the larva into the heart of the palm that can cause the greatest mortality of trees.

bud or heart
Palms, which do not branch (with a few exceptions), have one growing point, which is called the bud or heart. See the the first reference below (hope I copied it right), which explains it nicely. In some species such as the cabbage palm, it's edible and known as hearts of palm (see second reference).
