cover a period of occupation in lieu of rent
This is a slightly colloquial Danish expression for letting the deposit cover the last period of occupation - e.g. three months if the deposit was equal to three months' rent.

Opsiger udlejer lejeren, kan lejeren ”bo forudbetalt leje og forfalden leje op”. Depositum kan normalt ikke ”bos op” på grund af formålet med depositummet.
This means that pre-paid rent may be used up, i.e. that the tenant may continue to occupy the property until the end of the period covered by pre-paid rent, but that the deposit may not be used up in the same way instead of rent.
I do not know of an equivalent short, smart English expression.
Googling also brings up ´in place of rent´, but most examples seem to be American.

"lived up/consumed" (indirect conjugation of "to live up" or "consume")
This is the indirect conjugation of "lived up" or "consumed":
Should the tenant end his contract, tenant is able "to live up(consume) the rent paid up front and the past due rent". The deposit cannot "be lived up / consumed" because of its purpose(tenant warranty).

to be used toward the payment of rent
The deposit cannot normally be used toward the payment of rent because this defeats the purpose of the deposit.
Example sentence:
A security deposit usually may not be used toward the payment of the last month's rent.
