Grammar "... not which is ..." is wrong. Would be better as "... not something that is ..."
Sheila Wilson May 25, 2011:
I'm not surprised you don't understand! As Jive says, the text is actually trying to explain what is meant by the word "customary". Now, an explanation is supposed to make things clearer, but this one does not! I only hope the rest of the text is better.

"not which" refers to the meaning of "customary"

They explain the meaning of the word "customary" (a cultural norm, etc.) that they use in this context, and state clearly that by customary they do not mean purely customary for the business.

agree Sheila Wilson : I agree that it is defining "customary" to mean "normal custom in that country, not restricted to the business", but I don't agree that it is clearly stated

Thank you, Sheila! And I completely agree with you: my explanation was actually intended to clarify what they meant, rather than what they wrote:-) In fact, their phrasing leaves something to be desired indeed.

neutral Sheila Wilson : On the contrary, I believe they are saying that is it normal, not just in the business but also country-wide
