For the headline I would second Cilian's proposals. In the text itself, "Bindungspartner" could be another option. Out of interest, I read the website, gofink provided (thanks for the interesting read) and found it in the following paragraph:
"Bindung von SO2 durch andere Gärungsnebenprodukte
Über das Acetaldehyd hinaus sind alle weiteren Carbonylverbindungen in der Lage, SO2 zu binden. [...] Zu diesen schwächeren Bindungspartnern des SO2 zählen besonders Pyruvat und Ketoglutarat."
Thought, it could fit as your text also mentions "acetaldehyde, pyruvate and α-ketoglutarate.".
On the other hand, depending on context, it could as well sound too neutral or even "positive" (if e.g. in the following your text talks about higher costs due to more needed SO2). Or too scientific depending on the readers the text is written for.
