Hi everyone,
I'm doing a marketing text for a new liquid yeast to be used in commercial baking contexts.
Using liquid yeast, rather than the dry stuff, apparently gives you better "lissage". Does it make it "smoother"? Or is there a more technical word for this? Many thanks in advance!
La levure liquide s’incorpore mieux et est assimilée plus facilement dans la pâte, offrant ainsi un meilleur *lissage*. Sa qualité constante vous permet d’assurer une régularité de fabrication.

As a regular home bread baker, I feel that what they mean is that the yeast is more easily distributed uniformly throughout the dough.
You might also use: more uniform distribution or homogeneity
