French term

lissage

French to English Other Food & Drink dough
Hi everyone,

I'm doing a marketing text for a new liquid yeast to be used in commercial baking contexts.

Using liquid yeast, rather than the dry stuff, apparently gives you better "lissage". Does it make it "smoother"? Or is there a more technical word for this? Many thanks in advance!

La levure liquide s’incorpore mieux et est assimilée plus facilement dans la pâte, offrant ainsi un meilleur *lissage*. Sa qualité constante vous permet d’assurer une régularité de fabrication.

Discussion

Philippa Smith Jan 10, 2011:
Of course, I'd forgotten the commerical context, I was seeing someone in a flour-covered apron standing at a table kneading away...! I'll go for an agree with your solution then...
Mark Nathan Jan 10, 2011:
In a commercial context the kneading will almost certainly be mechanical, so not sure how it could be easier.
Philippa Smith Jan 10, 2011:
I like Mark's answer, but was thinking that rather than referring to the improved texture of the dough, it is talking about improved kneading: so "making it easier to knead" might be a solution...

smoothness and elasticity

providing improved smoothness and elasticity.

I am basing this on the idea that "lisser la pâte" = to knead it until it is smooth and elastic.

ease of incorporation

As a regular home bread baker, I feel that what they mean is that the yeast is more easily distributed uniformly throughout the dough.
You might also use: more uniform distribution or homogeneity
