exit salary / final salary on retirement

Depending on context - you could probably use final salary on retirement here.

Presumably the highest level the person earned, unless there was some senior arrangement with reduced duties and reduced pay.

In the case of a wage earner you would call it the final wage on retirement instead.

Looking at it again, these are obviously two different things.
The final salary on retirement is of course only relevant around retirement, while as Paul Lambert points out, the exit salary/wage will apply when someone leaves a job at any stage.

neutral Paul Lambert : I would agree with the term "exit salary", but the explanation is a bit confusing. I got a "slutlön" when I quit my old job in which I then collected all holiday pay and other benefits that had acculumated at a pro-rated amount for the year.

My guess is that this entry includes all salaries, other payments, expenses, other fees, etc that the consultant has received whilst employed/hired by the company.
