Depende del contexto. Si se requiere conservar el nombre completo en francés (quizás por ambiente?, como marca?, publicidad?) lo dejas tal como está. Pero si no es ese el caso, pones hotel en español, con minúscula igual que el hotel Waldorf de la esquina.
